Abstract

A kutatás során Thymus és Origanum fajok beltartalmi és érzékszervi tulajdonságait vizsgáltuk különböző szárítási (természetes, 30 fok, 40 fok, 50 fok) és tartósítási (fagyasztás, liofilizálás) módok függvényében. Habár a szárításnál alkalmazott magasabb hőmérséklet gazdasági szempontból előnyösebb lehet, a vizsgálati eredmények igazolták az 50 fokos hőmérséklet negatív hatását az illóolaj-tartalomra, a kivonatok összes-fenoltartalmára, összantioxidáns-kapacitására és érzékszervi jellemzőire. A fagyasztásos technika hasonló hatóanyag-tartalombeli veszteségeket idézett elő, bár az illóolaj összetételében ezek a minták hasonlítottak leginkább a friss alapanyaghoz. A liofilizálás esetében az alapvető probléma az eljárás során bekövetkező nagy illóolaj-veszteség. Az érzékszervi tulajdonságok közül a küllemi tulajdonságokra nemcsak a túl magas hőmérsékletű szárítás (50 fok) hat kedvezőtlenül, hanem a lassúbb, alacsonyabb hőmérsékletű szárítás (30 fok) is. Mivel, a kedveltséget nagymértékben befolyásolják a küllemi jellemzők, így ezek a szárítási módok kevésbé eladható végterméket eredményeznek. Az összes vizsgált paraméter és a gazdasági megfontolások figyelembevételével a kíméletes, de még viszonylag gyors szárítási mód (40 fok) ajánlható mindkét növényi alapanyag esetében. A liofilizálás csak akkor ad megfelelő minőséget, ha a kiindulási alapanyag kellően magas illóolaj-, illetve fenolos komponens tartalommal rendelkezik. | In our research work the effect of the different drying (natural, 30-40-50 Celsius degree) and conservation (freezing, freeze-drying) methods were investigated on the active compounds and the organoleptic parameters of Thymus and Origanum plant species. Although the higher temperature during the drying process can be regarded more advantageous from an economical point of view, according to our results the 50 Celsius degree can cause a significant damage in the amount of the active compounds. These samples were also not desirable for the consumers referring to their organoleptic parameters. The freezing can result in a huge loss of the active compounds in both plant species, too. Only the essential oil composition was regarded positively, thus it was the most similar to the fresh plant samples. In the case of freeze-drying the main problem is the significant loss of the essential oil during the drying process. Not only the high temperature can affect negatively the organoleptic parameters of the chosen plant species but the too slow drying process as well by applying low temperature (30 Celsius degree). These samples were less desirable for the consumers. Based on each evaluated parameters considering the economical priorities as well the drying temperature of 40 Celsius degree is recommended in the case of both plant species. The freeze-drying can result in a good quality final product only if the plant material is rich in essential oil and phenolic compounds.
