Abstract
In this paper wie are giving a method for the estimation of the different oxidation systems in plants. We estimate side by side the ascorbic acid oxidase, polyphenol, oxidase (and peroxidase. We used ascorbic acid as oxidatipg substance for the three enzymes and measured the velocity of oxidation of ascorbic acid by plant extracts, giving the suitable catalvsators for the different oxidases. So for instance ascorbic acid oxidase activity can be estimated by measuring the velocity of oxidation of ascorbic actiid without adding any activators. Polyphenoloxidase activity can be estimated by adding pyrocatechine and ascorbic acid and peroxidase by giving peroxide and ascorbic acid.
