Abstract

A Prunus armeniaca faj északi termesztési határán elhelyezkedő Magyarország régóta jelentős termelője a közép-európai régiónak ezért a termesztett fajták beltartalmi értékeinek vizsgálata releváns a fogyasztó és a termelő számára is. A kutatásban tizenhét pontban hasonlítottunk össze hét különböző fajtát. A vitaminok, makro- és mikroelemek, cukor-sav arány meghatározásával számszerűsítettük a fajták előnyeit és hátrányait a fogyasztás szemszögéből. A ‘Bergeron’ és ‘Gönci magyar kajszi’ mellett kiemelkedik a ‘Hargrand’ fajta méretével és beltartalmi értékeivel is. A vizsgáltak közül a kis mérete és nagy savtartalma miatt kedvezőtlen választás a ‘Kioto’. Hungary, which is located at the northern cultivation border of the Prunus armeniaca species, has long been a significant producer in the Central European region, therefore the examination of the nutritional component values of the cultivars is relevant for both the consumer and the producer. In the research, we compared seven different varieties at seventeen parameters. By determining the contents of vitamins, macro- and microelements, and sugar-acid ratio, we quantified the advantages and disadvantages of this cultivars from the viewpoint of consumption. In addition to the ‘Bergeron’ and ‘Gönci magyar kajszi’, the ‘Hargrand’ variety also stands out for its size and nutritional value. Among those tested, ‘Kioto’ is an unfavorable choice due to its small size and high acid content.
