Abstract

The study examines the rural impacts of the social and economic transformations following the change of political system in the peripheral regions of Northeastern Hungary, with particular attention to changes in food culture and community sustainability. As a result of the collapse of heavy industry, unemployment, and out-migration, traditional peasant farming and self-sufficient food production gradually receded into the background, which also brought about changes in local dietary practices. The study presents the example of Hernádszentandrás as a case study, where the Bioszentandrás project, based on organic farming, offered a response to the settlement’s social and economic crisis. The establishment of the organic garden not only functions as a job-creation initiative but also as a means of reviving local food self-determination and a sustainable food culture. The vegetables grown and processed organic products produced within the framework of the project reach not only local consumers but also markets and catering establishments, while practical knowledge of organic farming is also passed on to community members and school-age children. The research points out that, alongside environmental sustainability, the Bioszentandrás project also plays a communitybuilding role: it contributes to strengthening local identity and reinterpreting traditional knowledge.
