Abstract

A tanulmány egy OTDK dolgozat jelentősen rövidített változata. A rövid ellátási láncok működését és strukturális kihívásait vizsgálja a termelői piacok kontextusában. A kutatás három pillérre épül: egy 118 fős, az attitűdök időbeli elmozdulását vizsgáló longitudinális fogyasztói felmérésre, kistermelői mélyinterjúkra és egyéves résztvevő megfigyelésre, valamint az önkormányzati döntéshozói szféra megkeresésére. A dolgozat ezen integrált módszertan segítségével feltárja a kínálati, keresleti és intézményi oldal meglátásait, és vázolja a fenntartható városi élelmiszer-politikák jövőbeli fejlesztési lehetőségeit. | The study is a significantly shortened version of an OTDK (National Student Research Conference) thesis. It examines the operation and structural challenges of short food supply chains within the context of farmers' markets. The research is built upon three pillars: a longitudinal consumer survey of 118 respondents investigating the temporal shifts in attitudes; indepth interviews with small-scale producers combined with a one-year participant observation; and an engagement with the municipal decision-making sector. Through this integrated methodology, the paper uncovers the insights of the supply, demand, and institutional sides, and outlines future development opportunities for sustainable urban food policies.
