Abstract
An indigenous meatball-making machine has been developed, fabricated, and evaluated to improve the efficiency and uniformity of meatball production in small-to medium-scale meat processing units. The machine is designed to automate the shaping process by using a hopper-fed screw extrusion system, dual Teflon rollers with nylon teeth, and a cutting mechanism to ensure a uniform size of meatballs. The system is designed to be practical, hygienic, and economical, and can process about 25–30 kg h −1 of meatballs, each weighing 15–17 g. A Central Composite Design (CCD) was implemented using Design Expert software to investigate the effects of key process parameters, namely roller speed, roller clearance, and feed rate on forming efficiency, material loss, and forming effectiveness.
